This is actually an old recipe, I have been cooking all sorts of fish dishes last summer without being able to take pictures on most of them but this one made it. This was done around the same time with this other basa recipe, I actually grilled a ton of fish that day and used it on several recipes. Pretty cool, though it sucks taking pictures when you are hungry or anxious to taste the thing you’re cooking but I think it came out great in the end. This is mostly a summer recipe, but not everybody lives close to the freakin’ Arctic Circle like me, so those lucky ones, go ahead and enjoy it for the rest of us.
- 4 (4-oz) basa fillets
- 1 tbsp lime juice
- 1 tsp garlic pepper
- ½ cup corn kernels, canned
- 4 to 6 tortillas
- 1 avocado, pitted, peeled and diced
- ½ cup salsa
- shredded lettuce
- sour cream
- I did my fish on a maple plank on the grill but you can do it in the oven as well, using a baking pan with foil. Spray some cooking spray on the foil then place the fillets on it; drizzle with lime juice and sprinkle with garlic pepper and salt. Bake for 8 to 10 minutes or until fish flakes easily at 375° F / 190° C.
- Coat medium skillet with nonstick cooking spray and place over medium-high heat. Add corn and cook and stir until well browned.
- Get four tortillas and top evenly with flaked fillets. Layer each with corn and avocado; top with salsa and the optional lettuce and sour cream.
