Easy, non fail salad with simple ingredients

This is it! I am finally posting my go-to salad recipe. Don’t expect a weird and complicate dish, I like simple things and I have my veggies that I really enjoy no matter the season and time of day. And yes, I have been known to eat salad for breakfast as well, if accompanied by a delightful pair of sausages or bacon.

What can I say, we all have our own weird ways. One of mine has always been a good tomato salad, especially when mixed with the sweet Campari variety. Some of you might know them as tomato-on-the-vine but in Canada those are bigger than Campari and they definitely don’t have the same taste. Actually I don’t remember using any other kind of tomatoes, unless I was using them for a recipe or a soup, but in my salads I mainly use these.

Another thing that I really like are red onions, well I like shallots too but I rarely use them in a salads. Mix Campari tomatoes and red onions and you are set for the best salad that you could have ever tried, the rest of ingredients are just a bonus. On the other hand, I am not very fond of salad dressings, just give me olive oil, vinegar or lemon and that’s all I need, but there has been exceptions, of delicious kind. But enough writing, just enjoy my recipe and don’t forget, there are no set quantities when you make a salad, you can definitely go nuts. Have fun!

My Go-To Salad

Ingredients
  • loads of Campari tomatoes
  • ¼ cup red onions
  • 1 English cucumber
  • ¼ cup green olives or black
  • ¼ cup goat cheese
  • 3-4 tbsp olive oil
  • ½ lemon juice or 2-3 tbsp vinegar
Instructions
  1. Chop everything the way you want it and mix them into a decent size plastic bowl along with a salad dressing of your choice
  2. Enjoy!
