A personal take on an Italian classic recipe

This is my own version of insalata caprese but it is not far from the original recipe … I think. Anyway, the original uses generous slices of  fresh mozzarella which I replaced with bocconcini, still mozzarella cheese but in a cuter form and Campari tomatoes, best tomatoes out there. Add all this to my favorite breakfast, eggs and sausages and you have a winner.

Insalata Caprese

Ingredients
  • ½ cup bocconcini, small
  • 1 cup Campari tomatoes
  • basil, chopped or whole leaves
  • 1 tbsp virgin olive oil
  • 1-2 tsp balsamic vinegar
Instructions
  1. Again not a big deal making this thing. Chop tomatoes, mix everything together, sprinkle some basil (the more the merrier) and use the good balsamic and olive oil... it is worth it.
