Roast Pork and Veggies
Serves: 4
  • pork chops or any other meat
  • tomatoes
  • potatoes
  • sweet potatoes
  • sweet peppers
  • carrots
  • olive oil
  • cumin
  • oregano
  • ground pepper
  • kosher salt
  • any other spices that you might like
  1. Add the meat surrounded by a ton of veggies to a big roasting pan and pour around 4 tablespoons of olive oil over.
  2. Generously sprinkle herbs and spices onto pretty much everything. Cumin actually works only on potatoes but don't let that scare you off.
  3. Cook for about an hour or until meat looks done at a temperature between 375° F / 190° C to 400° F / 205° C.
