Chicken Fattoush Salad
Serves: 2-4
  • 1 English cucumber
  • 1 green bell pepper
  • 3 medium tomatoes
  • 6 green onions
  • 1-2 boneless skinless chicken breast cut in small strips
  • ⅓ cup of chopped cilantro
  • ⅓ cup of chopped parsley
  • 1 tbsp finely chopped mint
  • ¼ cup olive oil
  • ¼ cup lemon juice
  • salt and pepper to taste
  • 1 tbsp sumac
  1. Grill the chicken breast and cut it in small strips.
  2. Chop all the tomatoes, cucumbers, green peppers and onions in small cubes; throw them all to a large bowl. Add the cilantro, parsley and the finely chopped mint.
  3. In another bowl, whisk the olive oil, lemon, salt and pepper and sumac until it turns thick.
  4. To the large bowl, add the chicken and pour the dressing over everything. Toss well.
  5. Enjoy!
