Tabbouleh Salad
Serves: 2-4
  • 1 tsp lime zest
  • ¼ cup lime juice
  • ¼ cup olive oil
  • salt and pepper to taste
  • ¼ cup cracked bulgur
  • ½ cup green onion, chopped
  • 1 cup Italian parsley, finely chopped
  • 1 English cucumber, cubed
  • ½ lb tomatoes, cubed
  1. Add bulgur to a cup of hot water and let soak for 30 minutes or more, depending of how soft you want your bulgur to be.
  2. Whisk the lime zest, lime juice, olive oil, black pepper and salt together in a small bowl.
  3. Chop and cube all your veggies and mix everything in a large bowl. Add the soaked bulgur along with the dressing and toss.
  4. Enjoy!
