Tabbouleh Salad

Serves: 2-4
- 1 tsp lime zest
- ¼ cup lime juice
- ¼ cup olive oil
- salt and pepper to taste
- ¼ cup cracked bulgur
- ½ cup green onion, chopped
- 1 cup Italian parsley, finely chopped
- 1 English cucumber, cubed
- ½ lb tomatoes, cubed
- Add bulgur to a cup of hot water and let soak for 30 minutes or more, depending of how soft you want your bulgur to be.
- Whisk the lime zest, lime juice, olive oil, black pepper and salt together in a small bowl.
- Chop and cube all your veggies and mix everything in a large bowl. Add the soaked bulgur along with the dressing and toss.
- Enjoy!
