Basa Fish Tacos
Serves: 4 to 6
  • 4 (4-oz) basa fillets
  • 1 tbsp lime juice
  • 1 tsp garlic pepper
  • ½ cup corn kernels, canned
  • 4 to 6 tortillas
  • 1 avocado, pitted, peeled and diced
  • ½ cup salsa
  • shredded lettuce
  • sour cream
  1. I did my fish on a maple plank on the grill but you can do it in the oven as well, using a baking pan with foil. Spray some cooking spray on the foil then place the fillets on it; drizzle with lime juice and sprinkle with garlic pepper and salt. Bake for 8 to 10 minutes or until fish flakes easily at 375° F / 190° C.
  2. Coat medium skillet with nonstick cooking spray and place over medium-high heat. Add corn and cook and stir until well browned.
  3. Get four tortillas and top evenly with flaked fillets. Layer each with corn and avocado; top with salsa and the optional lettuce and sour cream.
  4. Enjoy!
