French Tuna Salad

- ¼ (60ml) white wine vinegar
- 1 tbsp. (15ml) fresh lemon juice
- 2 garlic cloves, minced
- ¼ tsp. (1ml) dry mustard
- 6 tbsp. (90ml) extra virgin olive oil
- 1½ cups (300g) fresh French (baby) green beans
- 3 hard-cooked eggs, peeled and quartered
- 1 cup (250ml) canned tuna, drained
- 2oz (60g) olves, sliced
- 4 cups about 2 Boston lettuce
- Whisk together vinegar, lemon juice, garlic, mustard and olive oil. Add salt and pepper to to taste.
- Arrange green beans, tomatoes, eggs, tuna and olives over lettuce. Drizzle with dressing and serve.
