Tortellini with Homemade Sauce
Serves: 4
  • ¼ cup olive oil
  • 1 large sweet white onion, chopped small
  • 4 garlic cloves, thinly sliced
  • 1 tbsp oregano
  • 1 tablespoon dried thyme
  • ½ carrot, finely shredded
  • 2 cans 28 oz each (800ml) crushed tomatoes
  • salt and pepper to taste
  1. Using a 3 qt (3L) saucepan, heat the olive oil over medium heat. Add the onion and garlic and cook until soft and light golden brown.
  2. Add the thyme and carrot and cook 5 minutes more, until the carrot is quite soft but not fully cooked.
  3. Add the crushed tomatoes and bring to a boil, stirring often. Lower the heat and simmer for 30 minutes until becomes quite thick.
  4. Season with salt and serve over tortellini.
Don't forget the Parmesan petals!
