Sausage and Kale Tuscan Soup
Serves: 4-6
  • 1 lb mild Italian sausage, cut in 1 inch (2.5 cm) pieces
  • 2-3 large yellow potatoes, cubed 1 inch (2.5 cm) pieces
  • 2 tbsp olive oil
  • 1 large onion, chopped (I used an electric chopper)
  • ¼ cup bacon bits (but don't use the fake ones, make your own)
  • 2 garlic cloves, minced
  • 1 cup kale, chopped
  • 1 cups swiss chard, chopped
  • 2 cups (500ml) chicken broth
  • 1½ quart (1L) water
  • ½ cup heavy whipping cream (original recipe has 1 cup but it was definitely too much cream for me)
  1. Add a couple of tablespoons of olive oil to your soup pot and brown sausage pieces in it.
  2. Add chicken broth and water to pot and stir; place onions, potatoes, and garlic in the pot.
  3. Cook on medium heat until potatoes are almost done.
  4. Add bacon; salt and pepper to taste; simmer for another 10 minutes.
  5. Turn to low heat; add kale and cream and let cook for another 10 minutes.
  6. Enjoy!
