Chicken Caesar Salad with Roasted Tomatoes
Serves: 2-4
  • croutons homemade or store bought
  • ¼ cup olive oil
  • 1 large red onion
  • 10-15 cherry tomatoes
  • 4-6 cups baby spinach (depends of how much you want to make)
  • 1 chicken breast
  • ¼ cup shaved parmesan
  • light Caesar dressing
  1. For croutons I used french baguette, cut 1 in slices and then each slice in 4 or six cubes. Place them into a plastic bowl and drizzle with olive oil; toss to coat then place them in a baking pan and bake in a preheated oven at 350° F / 175° C for 15-20 minutes or until they are golden-brown in color.
  2. After croutons are done do the same thing with tomatoes. Drizzle with a bit of olive oil and toss to coat then shove them inside the oven again for 10-15 minutes or until they start to crack (under pressure! lol)
  3. Cut a big red onion in six wedges and throw it on the grill next to the chicken breast.
  4. Place spinach in a large serving bowl, top with bread cubes, onion, tomatoes and chicken; sprinkle with Parmesan. Drizzle with dressing to taste and be amazed!
