Simple Tomato and Basil Salad
Serves: 2-4 servings
  • 2 lb Campari tomatoes
  • 1 medium red onion
  • 1-2 celery stalks
  • 1 tbsp oregano
  • 2-4 scallions
  • 1-2 serrano peppers
  • ΒΌ cup virgin olive oil
  • 2-4 tbsp balsamic vinegar
  • salt and pepper to taste
  1. Salad is pretty easy to make, no special instructions are required.
  2. Just clean, chop and mince all your veggies and toss everything in a large bowl with olive oil and vinegar.
  3. Servings might be more than 4, I usually eat loads of tomatoes. LMK what you think. Enjoy!
Top recipe is more simple, use radishes, red onions, feta cheese and loads of basil with a generous quantity of virgin olive oil.
