Pecans and Tuna Sandwich
Serves: 4 sandwiches
  • 2 cans of tuna
  • ½ cup red onion, chopped
  • ⅓ cup celery, chopped
  • 1 cup pecans, chopped
  • ½ tbsp dry dill or 2 tbsp fresh dill
  • ½ cup raisins
  • 2 tbsp parsley, chopped
  • 1 cup mayonnaise
  • salt and pepper to taste
  • 2 tomatoes, sliced for garnish
  • lettuce leaves for garnish
  • 4 buns
  1. Chop the onions, parsley, pecans, and celery. In a large bowl, add all the ingredients, with the exception of the bread, tomatoes and lettuce [duh]. Mix everything together
  2. To serve, lay a couple lettuce leaves on a slice of bread, place a couple scoops of tuna mix on top of the lettuce, add a couple slices of tomatoes and top with another slice of bread.
  3. Oh and if you can wait, let the mix chill for 30 minutes before serving, but good luck with that.
